In between Dancing With The Stars performances and rehearsals, Kate Gosselin flew to New York to hit out at her ex Jon, who's taking her back to court to gain primary physical custody of their eight kids amid claims that she is an absentee mom.

"I've got to work harder now than ever because I am a single mom," Kate said on Tuesday's Today show. "In my heart I'm always in my kitchen, baking and cooking for my kids, and I'll always be there. It's a struggle to be here [in New York], to be anywhere. The emotion that you see is because I would rather be at home with them." But her new status as a single working parent makes that impossible at times. "I have to work. I have to provide for them. And it's a struggle that every working mom, especially single moms, go through, and I'm really feeling it now, and it's really hard."

Kate says that despite her hectic, working mom schedule, she's able to make the most of the little time that she has with her kids.

"I make the most of every minute I have with them," she said. "When I'm home, we make those little spots of time really big in our memories."

In addition to appearing on Dancing With the Stars, where she won positive reviews for the first time since she started dancing, yet still earned the lowest score of the night, Kate is currently promoting her new book, I Just Want You to Know, a collection of letters to her eight children who are currently struggle with their parents' divorce.
